Broccoli Chicken Recipe
We worked together and made an amazing dinner the other night. Ryan made up his amazing fried rice where as I had intended to grab an on-stock packet of Broccoli Beef but use chicken. Wonderful accident as it was, we were out, which forced me to search online. I found the recipe at the below link which was awesome.
Turns out I had everything but the ginger, which was great. The recipe was a little labor intensive, but most Asian recipes seem to be very hands on. I would totally recomend this.

Alfredo
I made Alfredo last night, soooo good. It was an extremely easy recipe that cooked up fast and tasted great.
While my frozen chicken breast (2) were defrosting in the microwave I was washing and cutting up my broccoli into manageable chunks.
I don't like to wait long for my dinner to be ready, so I am usually balancing several pots at once, this one was pretty easy to do.
I steamed the broccoli and let that go on low for a while. I started my bow tie pasta on medium high heat and also let that cook for awhile. Once it got to boiling I turned it down.
The sauce was easy. 1 tablespoon butter or margarine accompanied 1 1/2 cups of heavy cream (or whipping if you prefer). I eyeballed my salt, and added extra pepper. You bring to a boil and then let it simmer till it thickens- be careful not to scald your milk. I like to taste it constantly to make sure I am getting the right flavor.
Meanwhile my chicken has finished and so I slice it up into chunks and cook it in a frying pan with olive oil and pepper.
I drain my pasta and splash some cold water on it. Throw it back in the pot and by now my broccoli is done as well (if not, just turn it up to high, it won't take long to be ready). I throw my chicken in the colander to drain off the oil and then throw that in as well.
I was hesitant on the sauce as I felt it should be thicker based off of what I normally order from restaurants, but decided I was too starved to wait and threw that in as well. It worked. Stirred it all together and had a really great meal.
We popped a bottle of 2009 Ste. Michelle Riesling.

Reality Show
They say I need a reality show, this could be a few reasons why:
Billie and I were talking at my desk and I was showing her my beautiful calf muscle. She went to move forward and touch my calf and at that instant I flexed it and yelled "BOOM!" I scared her pretty bad, it was hilarious.
I had to take the dolly down to get the mail and pretended I was Whimpy from Popeye and walked like him while singing a funny tune.
We received a St. Patrick's cookie platter, which I immediately started a Riverdance jig while humming in my best Irish Accent an Irish diddy.

Amazing
We had dinner with friends the other night and Claire brought over this amazing dessert, featured above. It was like cinnamon rolls and bread pudding had a baby with craisins. SOOOO GOOD!
How amazing is this zucchini?! Apparently size does matter in the kitchen. This luscious piece of vegetation really helped to add some robust flavor to our meat. It was the perfect partner in our menage a trois of potatoes and salmon. It just inserted itself in the meal as one of the forerunners of excitement. I was a bit intimidated to handle this bad boy at first, but once I really got into it I realized how truly delicate he was and I began to relax and enjoy myself. I've never had such a good time cooking before!
