Alfredo

I made Alfredo last night, soooo good. It was an extremely easy recipe that cooked up fast and tasted great.

While my frozen chicken breast (2) were defrosting in the microwave I was washing and cutting up my broccoli into manageable chunks.

I don't like to wait long for my dinner to be ready, so I am usually balancing several pots at once, this one was pretty easy to do.

I steamed the broccoli and let that go on low for a while. I started my bow tie pasta on medium high heat and also let that cook for awhile. Once it got to boiling I turned it down.

The sauce was easy. 1 tablespoon butter or margarine accompanied 1 1/2 cups of heavy cream (or whipping if you prefer). I eyeballed my salt, and added extra pepper. You bring to a boil and then let it simmer till it thickens- be careful not to scald your milk. I like to taste it constantly to make sure I am getting the right flavor.

Meanwhile my chicken has finished and so I slice it up into chunks and cook it in a frying pan with olive oil and pepper.

I drain my pasta and splash some cold water on it. Throw it back in the pot and by now my broccoli is done as well (if not, just turn it up to high, it won't take long to be ready). I throw my chicken in the colander to drain off the oil and then throw that in as well.

I was hesitant on the sauce as I felt it should be thicker based off of what I normally order from restaurants, but decided I was too starved to wait and threw that in as well. It worked. Stirred it all together and had a really great meal.

We popped a bottle of 2009 Ste. Michelle Riesling.
